Mangaroa’s Organic Lamb Ribs with Herb Marinade

    • 1.5kg Mangaroa organic lamb ribs

    • 3 tbsp organic olive oil

    • 4 cloves organic garlic, minced

    • 2 tbsp fresh organic rosemary, chopped

    • 2 tbsp fresh organic thyme, chopped

    • 1 tbsp organic lemon zest

    • Juice of 1 organic lemon

    • 1 tsp organic paprika

    • Salt and pepper, to taste

    • Fresh organic parsley, chopped (for garnish)

    1. In a small bowl, combine the olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, paprika, salt, and pepper to make the marinade.

    2. Rub the marinade all over the lamb ribs, making sure they are well coated. Place the ribs in a large resealable bag or a covered dish and refrigerate for at least 2 hours, or overnight for best results.

    3. Preheat your oven to 160°C (320°F).

    4. Place the marinated ribs on a baking tray lined with foil. Cover the ribs with another piece of foil to keep them moist during cooking.

    5. Roast the ribs in the preheated oven for 1.5 hours, or until the meat is tender and starts to pull away from the bone.

    6. Remove the top layer of foil and increase the oven temperature to 200°C (390°F). Roast for an additional 15-20 minutes, or until the ribs are nicely browned and caramelised.

    7. Let the ribs rest for 5 minutes before cutting them into individual pieces.

    8. Serve the ribs garnished with fresh parsley.
