Mangaroa's Beef Mince Spaghetti with Vegetables

    • 500g Mangaroa grass-fed beef mince

    • 2 tbsp organic olive oil

    • 1 organic onion, finely chopped

    • 2 cloves organic garlic, minced

    • 1 organic carrot, diced

    • 1 organic zucchini, diced

    • 1 organic red capsicum, diced

    • 1 can (400g) organic chopped tomatoes

    • 2 tbsp organic tomato paste

    • 1 tsp dried oregano

    • 1 tsp dried basil

    • Salt and pepper, to taste

    • 400g organic spaghetti

    • Fresh organic basil leaves, for garnish

    • Freshly grated organic Parmesan cheese, to serve (optional - you can also use nutritional yeast for a delicious dairy-free option)

    1. Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic, sauté until softened, about 3-4 minutes.

    2. Add the beef mince and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.

    3. Add the carrot, zucchini, and red capsicum. Cook for another 5 minutes until the vegetables start to soften.

    4. Stir in the chopped tomatoes, tomato paste, oregano, and basil. Season with salt and pepper. Reduce the heat and simmer for 15 minutes, stirring occasionally.

    5. While the sauce is simmering, cook the spaghetti according to the package instructions. Drain and set aside.

    6. Toss the cooked spaghetti with the beef and vegetable sauce until well combined.

    7. Serve immediately, garnished with fresh basil leaves and a sprinkle of Parmesan cheese if desired.
