Mangaroa's Beef Brisket Sausages with Mashed Potatoes

  • For the Sausages:

    • 8 Mangaroa beef brisket sausages

    • 2 tbsp organic olive oil

    • 1 organic onion, sliced

    • 2 cloves organic garlic, minced

    • 1 tbsp organic Dijon mustard

    • 1 cup organic beef stock

    • Fresh organic parsley, chopped (for garnish)

    For the Mashed Potatoes:

    • 1kg organic potatoes, peeled and cut into chunks

    • 4 tbsp organic butter

    • 1/2 cup organic milk

    • Salt and pepper, to taste

    1. Prepare the Mashed Potatoes:

      • Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

      • Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste. Keep warm.

    2. Cook the Sausages:

      • While the potatoes are cooking, heat the olive oil in a large pan over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove the sausages from the pan and set aside.

      • In the same pan, add the sliced onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute.

      • Stir in the Dijon mustard and beef stock, scraping up any browned bits from the bottom of the pan. Bring to a simmer.

      • Return the sausages to the pan and cook, turning occasionally, until the sausages are cooked through and the sauce has thickened slightly, about 10-15 minutes.

    3. Serve:

      • Plate the mashed potatoes and top with the sausages. Spoon the onion and garlic sauce over the sausages.

      • Garnish with chopped parsley and serve immediately.

    • Add a side of steamed green beans or peas for a pop of colour and extra nutrition.

    • Stir some grated organic cheddar cheese into the mashed potatoes for a richer flavour.

    • Add a splash of red wine to the sauce for an extra depth of flavour.
