Sourced from the animal’s hind legs, a whole lamb leg is one of the leanest cuts of lamb. Because of this, a lamb leg can be served pink or medium rare without compromising its flavour. To keep the lamb leg moist and juicy, a thin layer of fat is generally left on top of the leg. Furthermore cooking with the bone adds flavour and helps tenderise the meat.
For the best result sear in a hot oven at 200 degrees celcius for 15 minutes then reduce heat to finish cooking.

Resilience & Regeneration
Our veges are grown locally on our farm with no harmful sprays/chemicals inside our greenhouse, or outside in one of our classic 25m long garden beds. Happy herds of sheep, cows, and chickens are grazed in the pastures nearby, working as part of a regenerative system that nourishes the underground soil microbes, and giving back to Papatūānuku.
