This is a super simple and cheaper cut of lamb with slightly more meat than their foreshank counterpart. Taken from the lower part of the back legs as oppose to the front legs (see lamb foreshank) is where a large amount of collagen is kept, which when cooked slower gives the meat a soft, melt in your mouth texture and flavour. Great in an osso buco, or any slow cooked dish.
That said, like the lamp rump cooking suggestion it can be cooked as a mini lamb leg roast for 1-2 people!

Resilience & Regeneration
Our veges are grown locally on our farm with no harmful sprays/chemicals inside our greenhouse, or outside in one of our classic 25m long garden beds. Happy herds of sheep, cows, and chickens are grazed in the pastures nearby, working as part of a regenerative system that nourishes the underground soil microbes, and giving back to Papatūānuku.
